Avocado

The humble avocado delivers vitamins B and E in a big way! “E” plays a major role in the body’s defences and helps repair damage on the skin and scalp. Meanwhile, the avocado is rich in vitamin B7. Also known as Biotin, it helps produce keratin. And Biotin deficiency is known to contribute to hair loss in women too!

Red Cabbage

Rich in vitamins A and C. “A” helps in sebum production, so very important in moisturising the scalp. “C” boosts the production of another key protein, collagen. And hair follicles use this connective protein to produce keratin.

Cucumber

Cucumbers contain silica and sulphur. Silica helps in strengthening hair strands, reducing brittleness and breakage. Sulphur is an important component of our good friend keratin, so great for giving hair and scalp a helping hand!

Carrots & Broccoli

Teriyaki Tofu Bowl Recipe

What tastier way to deliver these brilliant ingredients into your body than with our Teriyaki Tofu Bowl recipe? So easy to make too!

Serves 1 and takes 40 minutes from start to serve.

Ingredients

1 tofu block

1 avocado

½ red cabbage

½ cucumber

3 carrots

1 head of broccoli

50ml teriyaki sauce

1 tbsp sesame oil

1 tsp soy sauce

160ml brown rice

1 lime

1 tbsp sesame seeds

Method

Follow instructions on brown rice packaging to cook

Preheat oven to 180c

Press the tofu by wrapping in a tea towel. Then, place under a heavy book for half an hour.

Meanwhile finely slice red cabbage and peel and grate the carrots. Then slice cucumber into matchsticks, chop broccoli into bite-size florets and peel and slice the avocado.

Chop the pressed tofu in to 1.5cm chunks, coat with 30ml teriyaki sauce, coating well. Then toss the broccoli in sesame oil and soy sauce. Transfer the tofu and broccoli to 2 separate dishes and roast of 15 minutes.

Toss red cabbage in the juice of 1 lime. Finally, season with salt and pepper.

Serve

Add the cooked brown rice to a bowl and top with all the veggies and tofu. Add a sprinkle of sesame seeds and a drizzle of teriyaki sauce. The Teriyaki Tofu Bowl recipe is good to go!
